I have to disagree. A very simple fix would just be to replace the NPCs that are involved. Instead of going to Vex, you'd go to some other person. For finding Esbern it be as simple as investigating the Ragged Flagon for some note.
Personally I would love for there to be a chance that you'd be ambushed along the road. Anything from Bandits to Dragons to Vampires to whatever. Maybe even have a Thalmor Road Block of sorts.
