But even if I was looking at it from a gameplay perspective I think I'd choose the Greybeards because I don't want them to stop giving me the: "Find the Word of Power" misc quest. I find that way more useful than recruiting followers or a dragonslayers blessing.
If that's the case, then it is interesting that both characters that give you this help are both voiced by the same person, Max von SydowI like to think that perhaps Esbern is the Friend that sends you letters about different Word Walls for that reason.

The recruiting thing is cool, but then again, you technically are recruiting people to answer to Delphine, not yourself. If they aren't following me, they aren't followers. That said, during my PS3 days I started with, the recruit option was the only way to make some characters potential followers, but on PC, mods fix that limitation.
I use them considerably more on PC as again, mods correct the default annoyances that I had on PS3 with them usually just being in the way and generally more trouble than they are worth. I rarely used one ever on console. I be a loner! Besides, I have Dragon Age and Dragon's Dogma that force me to have companions. It's nice to have a game where I don't have to play on a team.
