Many of the mods add aspects that Bethesda unfortunately overlooked, or did not have the resources to flesh out for the final release. Two mods I would HIGHLY recommend checking out are "frostfall" and "wet and cold". Skyrim looks cold in vanilla, but those two make Skyrim feel cold.

Be content w/ it on xbox . Mods are fantastic and Steam might put it on sale since the Dragonborn DLC is coming out, but if you've been playing for a year, mods may do little to freshen the experience for you. Also, try to get in on the beta for TESO, save yourself some $$$.

I vote none. I like the dual wield/ elemental fury shout combo, although I am reluctant to use it myself because it seems too strong. The suggested vegetable soup from the above poster^ is great advice also.
You should reconsider Stealth and Enchanting. You said that one of your problems with previous characters was the game became too easy. I think these skills are over powered, even for master difficulty.
