I agree, cooking can be very useful in some situations.
 
Well considering I am the Lord of Castle Volkihar, I don't even need to eat the foods necessary in Realistic Needs and Diseases mod I use.

I only cook for my RP characters, I really don't see the need for it on my regular adventurer character :D But for the roleplay aspect, sure, it's fun. :) I wish there was like, a cooking skill (as weird as that sounds!) that would maybe, increase the benefits of the meals you cook as you get higher in the skill. If you reached 100 and became a master chef, maybe there could be some extra-special benefits, like increased stats or perhaps a special blessing of sorts. I don't know :D

I cook vegetable soup for the stamina regeneration, but that's all.
