Well at the moment i'm role-playing a Redguard Alik'r warrior therefore for me Ahtar is my best follower. (He is melee) smartass

I like Uthegard (found in the Whiterun Tavern) for melee and bow. did pretty good.
As for mages, I haven't tried the ones mentioned yet, but I finished of the Azure Star quest and took on Aria (sp?). Dark elf mage. She almost always cast conjure fire atronach while shooting lightning (not sure if it is lightning or thunderbolt). She will also conjure a frost atronach and basically I think she uses most Destructive spells.
