The Rift, with its autumnal feel is beautiful to ride or walk through. I also love the open and warm expanse of Whiterun hold. Falkreath hold with its towering pines is also becoming a favourite area, especially with the Lakehouse views.

I prefer using the controller even when playing on PC. I suffer from RSI and using a mouse aggravates it too much. Plus I rarely use most of the shortcut keys on the keyboard. The controller just feels more streamlined.
Some quick thoughts:
Destruction - fire is efficient early on, dual wield to stagger strong opponents
Enchantment - increase rate of Magicka recovery, magic resistance, reduce spell cost
Restoration - at higher levels on the skill tree you get faster magicka recovery too
