I play it on PC. I use a few mods, but I wouldn't recommend doing that until after you are quiet familiar with the game and played it for a while. It's an old classic now. If you treat it as such, and get into the 'lore' - you may enjoy it.
Find the game in your steam library and right click and do properties. I know you can do properties option from the list.
I turned it off a long time ago due to mods.
In the first video, running into the water to fight a no-go for me. I would rely on poisons archery then dual wield -- maybe. Also, no armor except the minimal fur armor.
I like using rules. My vampires can only conjure undead...
Things I'd like added
Ash pile removal after xx number of days. Even if they aren't empty. Exception would be if a quest item was in it.
Ability to abandon side quests & faction start quests
Limit potion use & heal spell use
Auto level up enemies, bears...
Give dragons battles a chance to end...
If you have some of the civil war battles mods, then even based on who you favor at the negotiating table, you will be hated by roaming soldiers and attacked on sight.
Here are my 2 cent comments
#2 a) I suspect the battle may have knocked the sword onto the floor. When that happens, items may sometimes move 'below' the floor and are unreachable.
#2 b) Did put put the remains (skull) in the top of the lighthouse? There was a note near the boss battle I...
I would start uninstalling mods from most recent on back until the game works properly when you start a new game. I would exit completely between each uninstall.

The odder thing I have done is as a werewolf - just terrorize a town for a few nights. Howl here and there but not attack, just run away.
I find Calm and Fury are extremely useful if you work up the illusion tree. Fury is great for thinning out groups of bandits, etc.. while Calm will let me get thru an area I otherwise couldn't.
I always download mods first, then install them. That way I have the exact version to reuse in a save file.
You could try to get access to your old files by getting a USB hard drive kit that will mount your old drive. Then copy the files over. You could also copy the whole skyrim folder...
