As someone who likes the stealthy playstyle I think you will like Khajiits. They have a +5 to archery which will make the wood elf transition less brutal.

Hey Jagd, nice to meet you.
Seeing as you've already played a wood elf, you may want to try a race that is as different as possible from it. That way, you can have a new as experience as possible. Seeing that a Bosmer's a pretty good ranged character, how about a Nord? They are pretty good in Melee combat, allowing you to try out a sword and shield playstyle.
If you want to stick to stealthy characters, then I'd say cats are the way to go Hope you have fun regardless of which type you choose

Thanks Geel. I've tried using shields but they're not my thing. I prefer the sneak/archer style of play. I would try 'pure' mage but of all posts i've read, it can be difficult. I was thinking of maybe trying an orc 'Beserker' type of play. I prefer two handed over one handed though.

Yeah that's interesting too! You could try an orc/nord two-handed playthrough. Both of them are real good with 2-handed and if perked correctly, can become real killing machines.
