I thought officers were marked as essential therefor they're unable to be killed??

I know there's a Stormcloak officer you have to kill for the Dark Brotherhood, so you can get it that way. I've also run into some officer armors that are just laying around in bandit caves. And one time I encountered an Officer who was just walking alone. I don't know if it was just a glitch or what, but I was able to kill him and take his stuff.

But, yea, normally they are marked essential when they are in their camps. Which is stupid.

I had no idea. :~p I was trying to google search what the Imperial officer uniform looked like and couldnt find anything. I joined Imperials this time, and killed two officers in the Battle for Whiterun! ^^
