You use food to heal? Do you have something against potions? They are a lot better. I would never think of using foods to heal, however they do make a nice crunchy sound.
An apple a day keeps the alchemist away. ;)

I'd recommend against having Live if you're gonna do it. It's not necessarily "illegal" per se, but it does violate their TOS. You run the risk of being banned from Live if you do it.

OP, get your smithing up, craft all your gear, make a new weapon.

Smith it up at the grindstone and enchant it with absorb stamina.

You will not get 2 shotted and will provide dental appointments to your foes.

Seemed to me, as my gear got better, the armor and weapons were better too, provided I was the right level.

You are in the 30's, soon orcish and ebony should drop with some enchant on it fairly regularly.

I think the weapons are pretty varied. The problem is if you're ONLY using two-handed weapons, then it really limits the weapons you're going to find and want to use. And since almost every character specializes in one type of weapon or another, I can see how you'd feel a little limited. Especially in comparison to the Fallout series, where every weapon feels much different than the one before. There's a much bigger difference between a shotgun and a sniper rifle than there is between a dagger and a sword.
As for the strength of your weapons vs. the strength of your enemies, you have to consider the leveling system. I don't want to be bored by level 30 because I can kick everything's ass. I like to keep the challenge going. You have to remember that most enemies level with you. And your weapon's damage depends on your proficiency with that type of weapon. If you don't feel like it's strong enough, invest some perks in to that skill and concentrate on the type you use most often.
And even though it looks like everyone else has mentioned this, smith your own weapons if you're not happy with the ones you find. Smithing is one of my favorite things to do in-game. And if you're really feeling bored, go for enchanting. Enchantments definitely add more variety to weapons than anything else. Get creative! And good luck!
