I have been making a bundle just cutting wood in Riverwood. Too many spoilers on this thread. I'm only level 2. LOL! Don't worry I'll catch up.

Does every character have to be Dragonborn? What are some different paths you can take other than becoming a Dragonborn? I know you can be a vampire lord. Are there any specific paths for mages?

you can't be a Vampire/Vampire Lord and a Werewolf at the same time, i will not spoil on you the stuff but i will recommend to become a Werewolf anytime before you become level 10, i became a werewolf in level 6 ;)

as for the mage thing, you can always be more then 1 thing in Skyrim, those guys that become EVERYTHING are called god characters, since they join every factions (exclude two factions because of the dawngaurd and vampire thing and the Stromcloak and Empire thing) and do all those quests and etc. and i recommend everybody to make a god character as their first and main play-through, then start making characters with certain morals and different allegiances. There is a faction called the College of Winterhold if none of the NPC's told you about it yet, and it should be obvious that it's located in Winterhold, and it can't be missed, it's the largest thing in the small devastate city, and it's perhaps bigger then Dragonsreach in Whiterun! it will be like Harry Potter at the first when you start giving you lessons and stuff, i think they were prehaps the most interesting faction and the largest (in the amount of npc's/people there) faction in the game. So go join them, it should be the first thing you should do when making a mage.

Don't install Dawnguard until you are ready to play it. The Vampire attacks on the towns kill a lot of NPC's, many of whom have quests. I'm not sure why the game allows their death. I went in to Solitude and all the market vendors were dead. That's fluffed up.

Thanks I'll go there first.

It's already installed, so is Dragonborn. The thing is this will not be my only character or adventure, many players start over with new characters. Why would they have vampires kill important people? That sounds moronic. Hopefully it does not happen often. Besides I thought it only gets activated at a certain level.

I have 9 iron ore that I wanted to make into iron ingots. At Riverwood, I could not forge them. Is there something I am not doing right? I didn't see any option for turning iron ore in iron ingots. Every other option was there, but not that.

In my game I am level 8, and just entered the College at Winterhold (cool place). Right now, I am at the excavation site. An ice wolf chased me there. LOL!!! My fellow classmates finished him off. Whew!!!

You turn them into ingots in the smelter. It's the brown thing that looks like a fruitcake with a hole in it with fire.

Can you ever create a camp? Or buy someplace you can store stuff? Maybe buy a house or little cabin?I always find myself hugely bogged down with just about everything I can get a hold of. It is just a bit much. I have a problem trading sometimes. The trader is sleeping or something most times. A lot of times I have to through away valuable things, which would really help me pay for training, if I could trade them in.
There is a house you can buy in every major hold as well as a collection of "safe" locations to store things. Here's a list of safe locations: Category:Skyrim-Places-Safe - UESPWiki

When you're out in the wilderness, can you start a fire, cook food, sleep etc? If you can how do you do it. Can you get a tinderbox or something? Where can I find bears to hunt? Any tips on hunting elk? Everytime I shoot one it runs away. I am an Argonian, but my sneak skill never increases, even though activated the thief stone.
You can't make a camp of any form unless you are on PC with certain mods. As for hunting, it will take more than one arrow to kill an elk at lower levels, and bears will rape you unless you are experienced and a decent level. You will find bears at random in the wilderness. As for raising Sneak, you must be sneaking with enemies nearby and undetected for it to raise. Sneak attacks and moving while undetected near enemies raises Sneak. The Stone only gives you a 20% boost on what Sneak XP you gain normally. If you would like some help in stealth there is a guide on these forums that I wrote on stealth. http://skyrimforum.com/threads/stealth-thievery-assassination-a-look-at-being-silent-and-unseen.12073/

Also, I am level 5 and came across a giant who smote me to ruin, with one stroke of his club. Craziest thing I ever saw in a game. This particular giant was not very friendly at all. How long will it be before I can go back and kick the hell out of this giant? And his friend in the distance?
If you stand on top of a rock where the giant can't reach you you can kill it at level one, otherwise giants are about level 15-30+ before you can fight one depending on your build, difficulty level, and experience.

Anyway, I am trying to slowly learn. Right now I have the love triangle going on and the elf archer is escorting me to some camp where I have to kill the barbarian leader. On the way is where I met the giant. Sorry for being such a noob. This is a great game though. Thank god my fiance loves her own video games, or I'd be in real trouble. BTW I play on Xbox 360 :D
This game has a lot to figure out and takes time to learn everything. I have been playing the game heavily since day one and I sometimes, though now it's becoming less frequent, still learn something new. Skyrim is a game that you can breeze through if you use exploits and glitches, but become completely unstoppable at even at level 1 if you as the player possess the right skills and tactics. I like to say Skyrim is 75% player skill, 15% character skill, 10% gear.

Dawnguard kicks in at around level 10. They don't kill NPC's necessary to the main, or secondary quests, but they do kill NPC's who give out minor quests.

You can turn DLC's off and on at the main menu, under Data Files.

Well it is too late now. I will keep going. Supposedly if you delete the DLC the saved games won't work with the xbox. It will be ok though. I have a good game going anyway. Next character. I will just delete it and try to finish every quest. This game is hugely addictive. Normally I am a strategy wargamer. I have not touched another game since I started playing this.

Everyone was telling me things like, you look worse than I feel. Everywhere I went. I was like what is going on here. Then I went to Whiterun and the potion lady there said I had Antoxia, some disease. First off where does it come from? And how can I tell from looking at my character info and tell if he has a disease or not? Do you just have to wait for people to tell you that you look sick? Aren't some diseases harder to detect?

the lady at whiterun will say that regardless lol.
but if you open your menu (b) then go to magic (left), go to "Active Effects" and look for something in red. It should tell you what disease it is.

you can cure it by going to any shrine and praying to it. Or take a cure all disease potion.

That reminds me of my first character, She picked up Rockjoint or something and everyone was commented about her being sick, and I had no idea how to know if she had gotten a disease or not. But as zane above said, check your "active effects" under you magic menu, and if you have something, drink a cure potion or visit any of the shrines. In Whiterun, there's three shrines:

1) the Talos shrine in front of the Talos statue, where the loud preacher guy stands and yells about Talos
2) the Kynareth shrine inside the teple of Kynareth, next to the where the preacher guy is
3) the Arkay shrine inside the Hall of the Dead (turn left after entering the main door) next to the Temple of Kynareth

(note that activating a shrine grants you a blessing with aneffect that lasts for a few days: Talos shrines shorten the time in between shouts, Kynareth shrines grant you 25 stamina points, and Aray shrines grant 25 health points.)

I found Stillborn Cave. At level 9, I could only get through part of it. However, I did kill my first dragon in a mountain pass. What helped was my huge resistance to fire. Probably about 90%. I kept shocking it with a staff I found in Saarthal. Which had to be recharged once. Lydia was there putting arrows into it. I would say the battle was at least 5 minutes. Anyway, it will be some time before I can deal with Stillborn Cave.

How much weight can Lydia carry? Right now she is like my personal mule. LOL!
