I think the most difficult skill to level up is Smithing because of the tedious process of buying all the materials, making iron daggers, waiting 2 days, then rinse and repeat plus is slows down at higher levels. I admit to using the Infinium Book glitch after I was level 53 or so because I already did the core quest, and most of the faction quests (besides campanion because I was a Khajiit thief that gained a lust for magic and power after becoming Thieves Guild Master and joining the Dark Brotherhood). I wanted my perks so that I can enjoy the power! Skyrim never got dull for me after being level 81 because you can always change your play style and the game has so much to do! At one point I role played my character into joining the campanions and curing my vampirism so that he learns about honor, bravery, being a warrior, good guy stuff yada yada but shortly after completing the quest line, I became a Vampire Lord again and went back to my old Archery + Conjuration + Vampire ways!

I agree with you that speech is like GAAAAH!!! But for me pickpocketing is also bad. Basically you have to take until you get caught at lower levels and since you get caught alot you have to keep getting into trouble...

Conjuration I find to be very difficult. I'm constantly conjuring up atronachs but I never seem to level up without training.

Casting an atronach and dual-wielding bound swords gives out experience like candy.

For the most difficult skill, imo it's alchemy. It's so tedious having to go on a scavenger hunt for ingredients.

hardest to level up is the one that you don't use alot , like one handed weopon is easy to level up cuz you use it the whole time , but alchemy or speech are harder to level up

I'm glad I'm not the only one who hates smithing, gathering the materials or buying them its tedious . The rewards are worth the effort.

Alchemy working on that too it helps with speech only a little if anything it can fetch you some nice coin. Alchemy and Smithing can offer some skills for speech but.. I find my only skill up is when I get so impatient that I clear out their stock and get: Speech Increased. I've lost a quarter of my gold and over burdened by 500 lol

Conjuration you need to be near enemies for it to give you any points, same with spells from illusion (muffle, invisibility) or Alteration with the flesh spells.

No judgement towards the exploits non-combat related abilities are so darn time consuming, even the exploits are. :S

I found out that if you pickpocket while they can see you: The eye open you the percentage of taking it decreases. Lower the percentage the bigger the skill reward. Be prepared to quick save a lot.
 
To OP, I don't know what you mean by exploit, I just play. One thing I figured out for my orc to help speech is to buy & sell everything in singles. It takes longer to buy & sell, but speech will rise.

Even though restoration is something I always use and put perks into, it just doesn't level up as fast as the other schools of magic.
 
Restoration because even if you try to power level it, it takes like 80 uears to level up

To OP, I don't know what you mean by exploit, I just play. One thing I figured out for my orc to help speech is to buy & sell everything in singles. It takes longer to buy & sell, but speech will rise.
There are certain things in the game that allow you to gain more than intended if you know how to 'trick' the game into thinking that you haven't been rewarded yet and redo it. They're called exploits. Exploiting faulty programming.

I find pickpocketing the most difficult to level up. Probably because of the risk involved - I tend to save before pickpocketing someone in case they catch me and I get in trouble. With other skills, I don't really need to do that. smithing takes a long time, but its simple enough - just keep knocking up iron daggers with the two most abundant and cheapest materials until you level up, but I haven't quite got the hang of pickpocket yet. Nice perks involved, though.

After a while though, you can pretty much pickpocket loads and get away with it, it's just starting out that is hard.

There's also the fact that I didn't really like the idea of stealing from people to begin with, but I decided to make my latest character a shifty criminal type so I've been focusing on his sneaking, lockpicking and pickpocket skills. but sneaking and lockpicking are things that can be done in dungeons and bandit strongholds anyway, so even "good guys" can get away with it, but I find pickpocket the one thats most likely to get you in trouble.

I'd say smithing or alchemy, since you have to put work into gathering the materials needed, which can potentially take forever unless you know where everything is, meanwhile something like one-handed can be leveled up in no time, simply by slashing at enemies.
