If you wait three days she should leave your service. You can then go to DawnGuard and find her again(if that's the quest line you chose). Seems like she can disappear on people pretty easily.
If that doesn't work, and you really need her you can always reload where you lost her in the first...
Do you get the Crossbow as a Vampire? It might be a DawnGuard weapon only. I've only played one side so I don't know anything about the Vampire quest lines.
Strange. That's exactly what I had done as well. Part of me wanted to chose my parents being bad in the idea of relating with her more, but ultimately I chose the same. I did whip out the Amulet of Mara right away FWIW.

I'm a human and it never came up for me and I have read that of others as well. I have only seen Vampires get rejected. No dialog for humans regarding marriage.
I enjoy traveling with Serana too much to marry anyone else. I thought the whole marriage thing was pretty cool but I never did it for the meals or the store anyway, I just liked the fantasy of a close companion.

Cool! Thanks for posting. If it is related to the next DLC I won't be watching any of the trailers. I kind of ruined some of the "wow" moments in Dawnguard from their trailers, so patient I shall be as Yoda would say.
