Man, I don't even know if I can remember all of them, but let's see if I can list the main ones:
Xaraan (male, wood elf, ranger type) Level 60something now.
Head: Linwe's Hood
Chest: Linwe's Armor
Necklace: (Dual ench: Fortify Health Regen + Fortify Stamina Regen)
Hands: P.O. Imperial Bracers (Fort one handed + fort. archery)
Feet: P.O. Imperial Boots (Dual ench: Fortify Sneak + Muffle)
Ring: Fire Resistance + Frost Resistance (also have one I switch out that has Magic Resist + Shock Resist when I fight mages and another than has Fortify Pick Locks + Pick Pockets)
Weapon: Ebony War Axe (Dual ench: Cold + Paralyze I think)
Shield: Dawnstar guard shield (color matches armor) ench: Fortify Block + Magic Resistance and renamed Greystar shield.
Bow: Nightengale Bow Legendary. Use either Falmer arrows or Deadric Arrows.
Aeraven (High Elf warrior) level sixty something as well
Head: Orc Helm renamed Blades Grand Helm: Enchanted with Forfity Magica (looks so much better with blades armor IMO)
Chest: Blades armor (fort. health and stamina regen I think)
Hands: Blades armor (fort one handed + archery I think)
Feet: Wolf Armor (fortify sneak + carry weight ?)
Weapons: Blades swords (2) Enchanted with Fire and Cold + Elven Greatsword (family heirloom, enchanted with Fear + Paralyze)
Blades Shield (enchanted with Block and Magic Resistance)
Similar setup for necklace and rings (pretty much do this with most guys I make eventually)
Myst (Nord mage/rogue) Level 50ish
Head: Silver and Saphire Circlet with Fortify Magica + Magic Regen
Chest: Nightengale armor
Feet: Nightengale boots
Hands: Nightengale gloves
Ring: Silver elemental resistance as above guys have.
Silver Necklace: Fort health regen and stamina regen.
White hair, uses all ice magic.
Weapon: Chillrend or Blades sword with cold enchantment.
Tos'un (Khaajit hunter/warrior) Level forty something.
Head: (sometimes wears) Foresworn headdress with fort magica enchatnment on it.
Body: Savior's Hide
Hands: Foresworn bracers ( archery fortify)
Boots: Foresworn boots with Fortify Sneak
all foresworn pieces renamed "Savior's" whatever to be in line with body armor in menu.
Uses Imperial Bow (legendary) with Fire enchantment + Deadric Arrows.
and Nord Hero 2-hand BattleAxe (can't remember enchantment, probably fire)
Wears Galdur amulet (just because it looks good with Savior's hide and wilderness gear)
Few rings, one with fortify one handed, one with magic resistance, plus the werewolf one -- so my cat can change into a dog whenever needed)
Drizzt (argonian dragon hunter) Level forty something
Head: Nothing but his own spikeyness
Body: Dragonscale
Hands: Dragonscale
Feet: Dragonscale
Weapons: Dual wields Foresworn swords, both renamed "The Dragon's Teeth" one with fire enchant, other with cold enchant
