I really don't understand how assault works! Sometimes when I kill a non-hostile animal (deer, fox, rabbit) I get an increase in my assault stat, and sometimes I DON'T! :S

Will a high assault count have an effect on gameplay in any way (even when I have 0 in bounty)? Would a guard react if he saw me kill a fox/deer/rabbit?

Don't know about the first thing, as I've been wondering the same thing myself. I do know that it doesn't make any difference (gameplay-wise) if your assault count is 0 or 100000000000. Guards or other NPCs won't react if you kill a wild animal, but killing farm animals/pets is a crime.
