You can sell the unneeded scrolls to the moth priest at the end of the Dawnguard line. He will be in whichever faction's base you chose to support (Dawnguard or vampires).
As to statues, not sure but some quest items never seem to get set to non-essential after completing the quest, or in some cases the non-essential change that should happen bugs out (like getting stuck with the weapon from Bloodskal Barrow set as essential even after finishing the quest).
Getting back to the soul cairn is easy if you walked out the door in the portal room to discover the balcony, which unlocks a fast travel point which is different than that of the main castle, allowing fast travel to just outside the portal room.
Once you complete the soul cairn line, you can return at will with no issues even if not a vampire.
If you ask Serana's mom about returning before leaving the first time, she will tell you that a piece of your soul rubbed off on the cairn and a part of the cairn filled the void, thus allowing you to return without being a vampire or doing the partial soul trap thing.
