Here are some builds that aren't commonly used but are viable(sort of).
The Archer Templar: For those who don't know what a Templar is, they are warriors who are resistant to magic. The build replaces one or two-handed with archery. Should be quite a challenge because you don't get all the perks until level 76. Use the Mage Stone, and try to level up alteration ASAP.

The Magic Resistant Monk: As the name implies, a monk who resists the magic of annoying mages and necromancers. Should be easier because it only takes 56 levels to max out the perks. Also use the mage stone, as there are more perks in the magic section. Also takes longer to level up those skills than it would be for warrior skills.
