Pickpocket Hulda at Bannered Mare?

I was given a quest from the Thieves Guild to pickpocket an item from Hulda at the Bannered Mare in Whiterun. I waited for hours (day and night) and she never seems to sleep. I tried to sneak behind her (shows I am hidden) and pick her pocket but she immediately catches me. Any clues on how successfully pick her pocket and not get caught?

Use invisible potions and the shrouded boots. Make sure your pickpocket is atleast level 40 and you should be good

I did that one and my pickpocket was at like level 30 at the most. I believe I enchanted a ring and necklace with +40 pickpocket and it worked perfect

Currently my pickpocket level is 20 so I am guessing this is a no go. The invisibility potion seems to instantly stop as soon as I pick a pocket so that doesn't seem to help much.
