After joining the imperials or stormcloaks on the civil war quest line, when you get to the quest where you have to get the documents from the imperial or stormcloak courier, you don't have to kill the courier to acquire the documents. If you want to get them bloodlessly you can also pickpocket the documents. Even if your pickpocket skill level isn't very high you can still do it fairly easily without getting caught. I have been able to do it without getting caught when my pickpocket skill level was only at level 15 or 16.
