I have played as a sword and board warrior, Spellsword, Illusion thief, and a Necromancer. Sword and shield warrior is my favorite. Necromancer is really fun to but you need a few mods to make the most of it.
What skills would you use to make a warrior thief hybrid? A warrior/mage and a mage/thief is easy to figure out but I am having a hard time with this one. I thought about making a duel wield warrior with pick pocket and sneak skills but it just feels like a thief. You guys have any ideas?
I played a illusion thief and had him become a vampire. The abilities you get as a vampire sounded perfect for him but I didn't like the fact that his health, stamina and magic didn't regenerate.

I like the sword and shield warrior the best. Block, one hand, light armor, smithing and a bit of archery. The two handed and duel wield builds are no fun. You just stand there and swing your weapon until everyone is dead. With the shield you have a few more options in combat.
