Perhaps a combination of stealth, 1hander, illusion, and pickpocket would set you on the right path...
Well since you've already spent 100 hours as a mage, maybe go with either:
Hearty Nord Warrior: 2 Handers, Heavy Armor, Smithing
Bosmer Stealth Archer: Stealth, Archery
My current character is very much along these lines. Female, altmer, vampire lord.
I went with Illusion and Conjuration as my primaries. Restoration is 3rd. I also enjoy using the 1hander. Harkon's sword is great. Enchanting to top it off.

I like this post a lot. You are basically playing the same way I am.
There may be a misconception out there that when you are spotted you will need to go toe-to-toe with your opponent. This is not the case; you should be looking to restealth through the means mentioned above.
Yes, and this is inline with what I said earlier. A randomization function weighted by skills and perks, and we can also add in enemy difficulty (lvl, creature-type, etc) to this formula.
While that is an interesting story, I'm not sure you can extrapolate from that experience to conclude "That's exactly how it works". Might be too small of a sample size.
Well, I'm not sure I agree with you. Drawing a weapon might be entering combat, but I wouldn't consider it an attack.
But we may be entering into the land of murky semantics now.
I thought for sure I saw executions as my first attack, while in combat (meaning the enemy saw me coming and was in combat with me). The enemy didn't attack at all, so I don't believe I was countering anything.
Basically a charge-in, execution before the enemy can even get their first attack...
Not literally dice. But a randomization function that is weighted by your skills and perks.
People sometimes say 'dice' because the concept dates back to the original Dungeons & Dragons tabletop games, where the success of your actions were often linked to a random die cast.
Shields can be a lot of fun. Particularly because:
The block perk that slows time when blocking a power attack (this never gets old and is amazing)
Power bashing to stagger opponents with your shield is satisfying
Negating arrows and 50% magic
Also, I don't think heavy armor + shield is...
I disagree with the people suggesting health. Going 50/50 health/stamina isn't the best idea imo.
For a stealth archer, you are better to invest heavily into stamina. The ratio of magicka, health, stamina that I think works well is 1:1.5:3, and if you're really worried, 1:2:3.

Overall, I love the game, but here are my nitpicks.
Numbers. Combat damage, healing values, etc would have been appreciated. A scrolling combat text mod will likely address this (ideally the design of this falls inline with the minimalist UI)
Glitches/bugs that prevent quest completion...
