So can anyone explain to me how mining works and where to mine at? I've never found a mineral deposit yet. And after you get ore how do you convert them into ingots? Thanks in advance for your answers.

Go to the Smelter which is usually situated just outside the mine.

There is an iron mine just northwest of Whiterun. It looks like an old wooden fort with a forge and a leather rack inside it. It has a few bandits in it and a load of iron ore veins inside.

It's hard to explain where they're but I've found one North West of Riften which is actually near the path that leads to Riften and near the Marshland or whatever that murky water is. I've also been to one near Markoth which is either East or north east.

The ore is a blob on the floor/wall, found a few recently in a dungeon :) Not seen a pickax yet tho?

I bought a pickaxe from the smithy in town.. and have only found a few ore in the wilderness.. my impatience has let me to just buy what i need from the smithy too.. after doing a few quests to get the cash.

That's what I've been doing as well, but I'm going to start looking for some mines instead now.

So far, I've had luck mining in one mine just outside of Riverwood, and another mine just outside of Whiterun. I also found a random deposit of silver outside in The reach. All of the veins looked very similar to the rocky areas surrounding them, but they had "veins" in them. In one of the mines, it was all Orichalcum deposits, and those glowed with green veins.

After you get the ore, so to a smelter, and when you use it, it will give you a list of what you can convert to ingots. The ingots that you have the materials for will be highlighted.

I was searching just outside Whiterun, near the flour mills and noticed a slightly different colored patch of rock and it turned out to be ore it was almost in between the 2 mills in a low laying rocky area with red and green almost glow like streaks through it, those streaks seem to be on all the ore I have seen so far so it helps to spot it out.

Does anyone know if ore veins replenish? I ask because although I'm finding plenty of veins here in SKyrim, I want to come back to some for those "hard to find" ores like Ebony and Corondum (sp).

I've found that the dungeons with mine-able deposits provide you with a pick-axe early in the dungeon. I don't know if that's always accurate, but so far so good...

Hey there's Embershard Mine right at the start of the game between the standing stones and Riverwood

I found a pickaxe in there leaning up against a wall. You can also get a woodcutter's axe right outside it, so you've got firewood and mining taken care of.

Ore veins replenish their ores after about a month. Malachite may replenish every 15 days.

Thank you. Good to know that my ore will come back eventually!

There are mines everywhere, just look for a set of crossed pickaxes on your compass and it will take right to them.
