Third for traveling and exploring, first for combat (switching out to third at times to see around my character when fighting a group).
If you have problems with motion sickness, and are on the PC, try adjusting your field of view. The default can be way too confining if you play on a larger high resolution monitor and / or sit close to the screen.
Field of view can be adjusted in game by simply pulling up the console and typing "fov xx", xx being the fov you want to set. The game default FOV is 65, I tend to play at 95, but you can keep changing it till you find what suits yourself.
Note that it won't save the FOV unless you also edit the .ini files as listed below:

- Open SkyrimPrefs.ini, and search for [General] section
- Add fdefaultfov=XX at the end of the section. (where XX is the FOV value you want to change to). For example add fdefaultfov=90
- Open Skyrim.ini, and search for [Display] section
- Add fDefaultWorldFOV=XX (where XX is the FOV value you put in fdefaultfov)
- Add fDefault1stPersonFOV=xx.0000 (where XX is the FOV value you put in fdefaultfov)
