Hello! I've recently been playing Skyrim with heavily storied characters to make the experience more fun.

My next character is a lawful good Paladin type.
See story here (written for myself): https://docs.google.com/document/d/1jWR_-nx6CaElvlzHTVSyfxLG6IZ82s4mgbWkrZwk108/edit?usp=sharing

The TLDR version:
No main storyline/dragonborn
Wants to root out and destroy evil -> mostly necromancers and the undead
Distrusting of most Mage types

I'm looking for quests that make sense for my character to do.

So far I know I will do: (rough order)
Companions (turn down Werewolf and cure other members)
Markarth's Hall of the Dead (kill Eola the cannibal)
Maybe destroy dark brotherhood, but I dislike that I have to kill Grelod to start it.
The Break of Dawn (Meridia) - this also serves as a way to defeat his arch nemesis
Dawnguard story line + clear out all vampire locations

I've never done the civil war stuff, but being an Imperial I am considering joining their forces and doing that.
Otherwise, I'm looking for any quests that really fit the character - I'm less interested in powerful items and buffs.
Are there any quests for priests of Arkay or Stendarr?

Thanks!

If you're looking to make a "storied" character, then you need to keep in mind that the "nice, good, perfect paladin" is a really boring archetype. The character is too easy to read, and in a book, it'd get boring less than halfway through the story. So what you need is a chink in the armor. A flaw in his perfect image.

So, going off of what you said about killing Grelod, you could add in the flaw that he occasionally kills those who are alone. Physically or socially, depending on your discretion. Also, keep in mind that if a Lawful-Good Paladin came across Grelod, and knew how she treated the children in her care, there's no doubt that they'd wish she was dead, if they didn't kill her outright. But, if you're going for the character that would recognize she's evil, but wish there were another way to end the children's plight, then you could have it so your Paladin would kill her, due to his flaw, but then kill the Dark Brotherhood to atone for his "sin." It would serve to open up the "Destroy the Dark Brotherhood!" quest, make the lives of the children easier short and long-term, fuel the flaw in the perfect image of the Paladin, and enliven his story.

As for any quests to do, I don't know of any specific quests you haven't thought of, but you could make sure to travel by night, and only ride a horse when not in combat. It'll be slow, but you'll get more chances to find and kill RNG vampires. And I'd recommend not using the Cure Disease potions, to add further flavor to the character's story.

Also, side note, if you're wondering who'd make good targets for random killing, hunters and traveling NPCs would make perfect choices.

Oh, and if you want to give even more of a parameter to the kills, you could try using an Orc. Make it so he was raised by Imperials or something. Then, when you kill a random NPC, you make sure to activate Berserk during the killing. This way, if you come across another character that's alone within a 24 hour period in the game, you don't have to kill him/her because you can't Berserk.

Golldir will be a valuable friend and ally, as his family have also been targeted by a necromancer. Help him put his ancestors to rest in Hillgrund's Tomb (Whiterun guards mention it randomly), and perhaps take him on as a steward at one of your homes.

Help the people of Morthal wipe out their vampire problem. Taurentius might feel special sympathy for Helgi as she has been the victim of a horrible undead attack.

Benor is a follower who does not like wizards. you could make an exception for Falion, as he is taking care of a young orphaned girl, and he also cures vampirism.

I think he won't mind killing Grelod, as she is treating children cruelly who have already been through horrible experiences losing their parents. Strike her down and let Constance show them the same kindness that Taurentius received as an orphan.

You might also make friends with Balimund, as his apprentice is also an orphan.

In Solitude, take on the Man who cried Wolf quest. Wipe out the necromancers who are in wolf skull cave, and then help the priest of Arkay stop Potema from being resurrected by her vampire followers.

Kill Sild the Warlock who has been enslaving ghosts in Ranveig's Fast. This may become a target quest for one of Vilkas' rescue missions.

Kill Arondil, the necromancer in Yngvild Barrow, who has been enslaving female corpses.

Kill Lu'ah al-Skaven the necromancer of Ansilvund who has raised an army of the dead during her attempt to revive her dead husband.

Kill Bashnag, the wizard who leads a coven of spell swords in Southfringe Sanctum.

Stop Wyndalius from spooking the people of Ivarstead.

Help the ghost of Old Hroldan find rest so that the young boy living there doesn't have to put up with his mother's screaming every time the ghost pops up.

For more Arkay related quests, visit the priests in Whiterun, Falkreath and Riften. Also help catch the murderer in Windhelm.

Kill the witches of Darklight Tower (Riften guards mention the place)

I noticed you described the character as being a loner who doesn't bond easily with other people. Maybe at some point, he feels troubled by all of the killing he has been doing, slaughtering bandits and assassins and sorcerers, and he visits one of the priests of Arkay for consolation, and the priest tells him "you've spent so long fighting to bring peace to the dead, maybe it's time you celebrate the life that has been given you" and then Taurentius sets out to find love, marries and moves into a nice house and adopts a couple of children, a boy and a girl, and gives them the kind of life that was taken from him as a young boy.

Yeah I was thinking about him coming to terms with his past and realizing there is more out there for him. I've never done marriage or adoption in Skyrim yet so it's a good opportunity.

another good idea for your paladin to start the game I know I'm late but if you haven't started him yet then consider going to taverns and asking for jobs to do the bounties by the jarls men to protect the cities and villages ^_^

DON'T EXPECT SPOILER WARNINGS FROM ME
Consider the quest "Season unending". In it u make peace treaty between Tullius and Ulfric, but only untill you finish off Alduin.
You get the quest by not joining any of the factions untill you get guest to trap a dragon in Whiterun. Bulgruf will then object to your idea and Season Unending guest will begin. I spoiled enough already. Good luck.

The OP did say he doesn't want the character to become dragonborn and pursue the main storyline. So that means collecting dragon priest masks are out as one of them is on the island where you go to enter Sovngard and fight alduin.
And initiating the main quest means heading into Bleakfalls Barrow and disturbing the dead, which goes against his personal quest to leave the dead in peace.

When I played a paladin type I refused to enter any tombs unless there were already reports of the dead being violated by necromancers and waking up and attacking people.
