Lore wise, what ever happens to a Dragon if it isn't killed by the Dragonborn?

So I did a replay of the game, and ended up at a giants camp with a dead Frost Dragon already there. As I got closer its body burned up and I absorbed its soul without having to kill it myself.

I was reading the Lore about the Dragon cult/Miraak and Dragonrend. It says Dragons are Immortal, and Dragonrend makes them "feel" Mortal, something they cannot comprehend and forces them to land.

How can they be Immortal if 2 giants and 2 Mammoths can kill a dragon? What happens to the Dragons Soul then?
 
Well im not very well informed on the backstories and lores of Skyrim, but i do know that a dragon does not die unless its soul is absorbed by the dragonborn. I think it was Delphine that said that dragons were "resurrecting" after being dead for thousands of years or whatever. Alduin brought them back, which cannot be done after their soul is absorbed. So dragons ARE immortal, the dragonborn is just a badass who can kill immortals for good :p
