I believe I know the answer, I just want to be sure....

..That I'll still be able to join and fight for a side after moderating the cease-fire between the Imperials and the Stormcloaks at High Hrothgar. If possible, I'd like to leave the civil war quest for after the main quest, as this just seems to make sense, (and it'll give me something to do).

Yes. After you defeat a certain flying lizard and whatever quests you do, you should be able to join.

Say you join The Imperials. Nothing much will change except when they have to retake whatever hold you traded in for. I believe he (Tullius) says, "I hope we get this hold back. You're the one that said this hold wasn't important after all. You did this. And you're going to take it back."

Or something along those lines.

As for Ulfric, I can imagine him saying the same thing if you join the Stormcloaks.

Yep, sure can. They even have some unique dialogue on the side you choose if you did Season Unending first

Ya know, oddly in the 5K+ hours I have played, I have never once done Season Unending and never intend to. I pick a side, play it through and leave it at that.

The last thing I want is to negotiate peace. Crush the Stormcloaks. Crush them in to paste and consolidate Thalmor rule... oops... sorry... Imperial Rule!

I even make it a point to hunt down and slaughter everybody in all the Stormcloak camps, repeatedly (except for the unkillable one, of course, but I still beat him to his knees and saunter away whistlin' a happy tune).

I do intend to crush the Stormcloaks, but not before I crush Alduin, and eliminate Harkon and Miraak. Priorities. :beermug:

I like to defeat the Stormcloaks first so that I can make fun of them when I get to Sovngard as, apparently, their little paradise isn't all that exclusive since they let anyone in regardless of whether they're Nord or not (I'm lookin' at you Tulius!).

I completely forgot that Ulfric is there, in sovengarde, if you kill him before battling Alduin. He actually helps you fight him... Now I am undecided...
