I much prefer stealth builds. It brings an element of strategy to the game that doesn't exist if you're just running in and bashing everything in the head. It's the strategy that I love, and the tension that comes with it. (This may come from my years of playing Hitman and trying to get the Silent Assassin rating with "zero" kills...)
I used to dual wield with this character. I only plan on using my two handed weapon for when situations go south
But... if you only use two-handed weapons as a last resort, how are you going to build your two-handed skill enough to be able to do any real damage with them? If you're doing this with a mage who doesn't otherwise use weapons, yes, a two-handed weapon is your best bet. But if you're playing a stealth character who uses one-handed weapons at all, then switching to a two-handed weapon will actually make you weaker, especially later on in the game. At level 20 with an even moderately-built one-handed skill, you should be doing much more damage with a one-handed weapon than a two-handed weapon.
My back-up plan for stealth builds is usually dual daggers and the Elemental Fury shout. You'd be surprised at how quickly you can kill just about anything with that combo (provided, of course, that your one-handed skill isn't non-existent and you aren't using iron daggers at level 30). I've been able to kill a dragon
and multiple other enemies in the span of a single Elemental Fury shout.
