A Brute among Beasts
I got a good laugh out of "tales of Sheogorath", but my favourite book would have to be "Bone" (DB, 2 parts). Chilling, & after reading that on one dark night, I avoided Bonemould armour for weeks.
Other good books/series that were enjoyable to read:

Poison song
The Oblivion Crisis
The Wolf Queen
 
I know there simple but I always enjoyed the adventure book and the book about killing trolls.
But my favorite reads are the journals you find on your journey.

HAHAHAHAHAHA!!, this topic just sprang to mind this really odd book I found on a dungeon dive run, it was called "The Lusty Argonian Maid" honestly.... the female maid's character name was called "Lifts-Up-Her-Tail".
Upon finding this I was very surprised that there was even stuff like this in the game to come across, I opened it anyway being nosey and all, and it was actually a humerous read despite its, quite obvious, sexism.

My favourite book in Skyrim would be Night falls on Sentinel. (http://www.uesp.net/wiki/Lore:Night_Falls_on_Sentinel)
I came across it while on a quest named Rare Gifts for the Blacksmith in Dawnstar. I have a habit of reading every book I come across in the game (I'm a huge lore-junkie :p), so naturally I started reading it, and it was absolutely amazing! Not only was it a short story done just right, but also was a prime example of the effort the devs put into crafting the game, putting in bits and pieces of these extra little goodies that make the game world feel so much more... alive. Till date, it has been one of the best short stories I've ever read, game or not.

My favorite is definitely "A Game at Dinner". I just love that sort of thing. I first picked it up in that cave where you get the White Phial, and read it in there. It reads great with the dark and gloomy background music of the cave, which really adds to the atmosphere of the book. It's a really good and well-written story that genuinely builds up tension and suspense and draws the reader in. I was surprised that a made-up book in Skyrim could be that entertaining.

I'm also quite partial to "The Cabin in the Woods", which I read after finding in some inn somewhere (I think it was the Nightgate? Or maybe Dead Man's Drink? Not sure). That's a great one.

I haven't read The Wolf Queen yet because I can't find Volume 6 anywhere. I have all of the volumes except Volume 6, and I don't think I found that volume in any of my previous playthroughs either. I'm gonna look harder now though since it seems to be a popular one, based on this thread. I had already resolved to read it anyway since I did the Wolf Queen quest in Solitude in my previous game.

I haven't read very many of the books in the game honestly. I've read some, but most I just pick up and put away to read later. I always mean to but, apart from the ones that are essential to read to move a quest along, I just never get to it; I collect them all and stick them on my shelves in my houses and there they sit. Kind of like in real life lol. I think I have "The Locked Room", but haven't read it. As it seems to be a popular one on this thread, I think I'm gonna have to read it.

Try going to the Arcaneum in the College of Winterhold. You can buy and find a lot of books there for sure. Also check with merchants cause they tend to sell books a lot of the times as well. :D
 
Yeah, I was planning to check the Arcaneum next time I visit Winterhold. Of course I could just read it online, but that would be cheating haha. I'd rather find it in the game. I think the Arcaneum is a likely place for it.

Since I posted on this thread this morning, I got on Skyrim and read some of the books on my Whiterun shelves. There were some really great ones that I couldn't believe I hadn't read! "The Real Barenziah" series is magnificent. I also really liked "The Black Arrow" and "Argonian Account". I'm gonna read more books in Skyrim from now on. Can't wait to get to Riften and see what's on my shelves there.

I've read few books so far, I must admit. But among these few ones my favorites are The Cabin In The Woods and Incident In Necrom (this one I LOVED).

I don't always read the books I find, unless I feel like having a smoke and chilling a bit, but i read a book once about two thieves planning a big heist in an old castle and they end up being eaten at dinner by some weird cultists. Anyone remember the title? I would really love to find it again.
