This very seldom happens to me and if it does surprisingly not a lot of NPCs I loose. If someone I loose is important to me I just reload the last save. I know a get an inheritance sometimes but I have a whole heap of a lot of gold already (mostly from looting druagr, falmer, or any other enemies). I recently starting using console commands to get more gold too. So for me it doesn't really benefit me that much when my NPCs die. It doesn't benefits me when someone who is of importance dies like Lucan valarious dies because I sell stuff to him. It doesn't happen much but if it does, I simply reload. I did loose one of the beggers in solitude.

The more you visit a town, the more chances for them to show up in that town. They track you down so what I do is this :
1 - I tried not to show up in Riverwood and if I do, depending on how I am playing my game, I always try to arrive between 11 and 3 pm. My idea is to protect the river wood trader as much as I can. He is the most important person in that town. Without him, I would not be able to sale my stuff, and he is carrying 10k to buy my stuff, so you know how important he is to me to protect. I do my transaction and instead fast traveling, I look for vamps around the town. They usually come from behind the town or from the west road. I place one fire rune in that road and wait a bit. So, in other words, I set an ambush for them and stay ahead of them. If I am conjuring, I have two with me while in that town.
2 - I also protect the blacksmith in Whiterun. I know vamps attack always thru the main door. If I am in that town, I just wait for them close to that door while sneaking. They won’t see me and instead them looking for me, I will be ambush them and kill them by behind, specially concentrating my attention on the master vamp. The other two are too weak and the guards can take care of them.
3 - If you wake up Serana and deliver her to her father, vamps will start to get crazy about you and will track you down. I don’t do that till I know I am powerful enough, either a great conjurer or a sneak assassin capable to sneak and not to be seen.
4 - I drag their attention by cross country instead using roads and towns. If they find me, so be it, I fight them and they die. Usually I use my double casting fireball from a distance. I won’t let them get too close to me to avoid vampirism.
5 - Now that I know where the show up most of the time, it is all about be alert and prepare but one thing I have discover is that after you kill 3 masters vamps, they start showing less than before.
6 - I don’t care who else they kill, but the Riverwood trader and Riften and Whiterun blacksmith, are untouchable for me. I focus my attention to protect them. Can you protect the entire Skyrim ? No. So, concentrate your attention on those so important to you, try not to show up close to them as much as you can and if you do, plan ahead and do it during daytime.

Do basically until you finish dawnguard, Every non essential npc can die? Can't that render your game unplayable? ( if every merchant dies for example)

>> You need to protect your investments. That is part of the game. Loosing all the traders for example, is out of the question. You still can plan the game but how will you sale your stuff ? The game will not unplayable but you will put yourself in a difficult situation. This game is about strategy more than fighting all the time.

I think the vampires might have killed Belethor without me noticing. Every time I got to Whiterun his shop is locked. Damn it Skyrim, at least let me see them die so I can have closure!
>> That is why I do not wake up Serana till I am sure that I have : slow time ( all 3 ) magic, fireball double casting and sneaking. Those are my main weapons against them. If you wake up Serana, you will unleash all the vamps and they will start tracking you and kill people where you show up the most.

Aren't vampires supposed to blend in with townsfolk and use seduction and cunning to increase their influence over a hold, rather than just charge into town randomly hacking people in the street? I've joined Volkihar before, and they never sent me on any raids in towns.

Well, yes, but there really isn't anything more satisfying than leading a team of bloodsuckers in to a city/town and slaughtering the townsfolk. Ah... good times.

BTW - does Bloodwine actually have blood in it? I was having a get together up at the Castle and someone brought me a few bottles as a gift. :)
 
Ok this is pretty easy I have faced this issue quite often with vampires and dragons alike attacking small holds and big holds. In numerous times i have encountered situations where dragons killed npc's and vampires killed them and summoned them as throlls, i hate losing npc's because...
1: some are usefull for trading/selling merchandise and making big bucks ( i currently have 900k plus in septims, nearly reaching one million now, by exploiting the crown of barenziah perk which allows u to find more gems in every chest and urns and also by creating potions in large amounts and selling them in every city, town, stronghold, merchant etc.
2: towns empty of npc's make it look like a ghost town, and i hate that, i love interaction and a vivid town filled with people walking around. Currently after the stormcloak attack in whiterun i've noticed that the battle born family only leaves their home if i go inside of it ( still has to be further tested ) but it seems that the reason they dont leave the house too often is because the stormcloaks blame them for treachery and siding with the empire so without idolaf battle born who i killed because he was being a jerk to me because i said i was siding with clan gray mane and without the rest of the battle born family walking around because they feel threatened by the stormcloak guards, whiterun deffenetly seems emptier yet it's only one man shorter.

As far as dragons they seem to attack mostly small holds like riverwood, falkreath, dawnstar, orc strongholds, college of winterhold etc, open areas, if that's the case, as soon as u hear a dragon approach, run the fluff away from the village and hope that they will follow u, if that doesnt work re-load to a previous auto-save ( if u have auto-save after every exit and entry in places on ) and then plan ur approach to that location, fast travel to a location nearby that town and wait for the dragon to show up he will most likely show up even after u re-loaded and fast travel there again, BUT if u fast travel to a nearby location to the town where u wanna go to he will spawn around flying nearby where you're at, wait for him to land next to u or fight other enemies ( bandits or animals depends where you're at ) and take him on there. Dragons are tricky creatures so re-load, fast travel to nearby locations and ttake them out there.

Vampires are a new experience to me because i only recently installed all of the 3 dlc's to skyrim and am currently gonna start playing dawnguard for the first time, but with a level 97 character i've had my own share of vampire attacks, the way i proceeded is diferent however, if i see them killing npc's or using them i just reload to a previous save before they atack, also on a positive note, vampires only attack at night which means most npc's are sleeping however from time to time u may fast travel to a time where they start spawning like let's say 7pm 8pm ish and by that time npc's are either still finishing their chores and are going home or are just aimelessly walking around with nothing to do, in those situations u have to protect the, if that fails re-load again, also vampires tend to come by packs of 3, two throlls, and one master vampire or a master vampire with two hounds, and they always always always arrive by the main gate, except in markarth where they show up from the smelter and blacksmith side of the city. If you and the guards can kill them before they kill any npc's good, but always make sure u look around the general area where the attack took place and see if there are any bodies laying around.

You have to be tenacious cautious and smart to avoid them from killing people, it's true npc's do tend to attack vampires and dragons and end up killing themselvs, so reload try again, try fast travelling at night or to a nearby location if it's dragons, and if it's vampires just watch the main gate behind u and see if any spawns, kill them mercilessly as quick as possible with your best weapon, what i found intriguing is that vampires are weak to fire spells and fire enchantment, use that to eliminate them quickly enough, and bring a follower with u, they do wonders to cast the attention of the vampires on them and urself instead of npc's.
