Here is my dilemma, I have 3 characters on my PS3, and I only want to load the DLC content from the CD to play on one of them. Can I do this, or will all three characters get all the content? What about if I have more than one profile? Any and all assistance is appreciated.

I thought you can turn off DLC's at the main menu. Before pressing "Continue", there should be a line saying: DLC or Expansions.

Turning them off will affect all characters. I don't think you can switch off DLC per character..

I do not know what happens when you have a save with all the DLC on and then turn them off.

So be carefull when you have a character that is already in the DLC content.
Might want to make a back-up save on a USB-stick or something.

The only way around your issue (and I too am on PS3 and have had it) is to save the character out to my online storage or to peripheral storage (usb, harddrive, etc...) and then delete them and then reload them when the time comes for you to start using them again.

Someone said something about turning DLCs on or off on the main menu and I have never seen this option.

If I want to play without them, I just delete them from the PS3 and then reload them when I want them again. Fortunately they are practically eternal on the Playstation Plus network (of course you could always save them to a periphery as well if you wanted to).

I got mine digitally long ago, so perhaps the disk works differently, but I doubt it.

Even if all 3 get all the content, you don't have to do it. You will get reminders from guards of the dawnguard, sure, you will get jumped randomly by vampires and cultists over time but that's more loot for you and experience. On PS3 it'll show your DLC available to you but to keep it on just one character while keeping the others vanilla I don't think is possible.
 
I haven't tried it myself but I would imagine, if you put your characters' save file on a USB stick or something similar, and then moved them to your secondary account and then only loaded the two chosen DLCs on that same account, that you would be able to do that. I have heard of it being done but I haven't tried it myself. I would think that that would be your best bet to do what you're talking about. Just be careful to keep the save file(s) separate from then on, and as a few people above me said, be absolutely sure your character doesn't have anything from the third DLC you don't want them in before playing. Also be sure to keep back ups as the above said as well. Hope this helps. If you have any questions or need something clarified feel free to ask. I will try to help to the best of my ability.

I think you'll come to see that the DLCs are as much a part of Skyrim as the original. Life goes on. I don't really get harassed by vampires or cultists (dawnguard and dragonborn, respectively) and I give up maybe one dragon soul to Miraak before I OFF him. Having Waking Dreams for all your characters is worth keeping all DLCs turned on.

I think you'll like 'em. Hearthfire and Dawnguard make the RP a little deeper and I, being one who craft alot, like all the crafting/smithing options that are opened up. :) Enjoy!
