No no... twice was what I thought at first, too. But I have tried this. To change as many times as you wish you must equip the ring and activate its power (Found on the Powers list like Beast Form). This can be done infinitely by equipping the ring again when you shift back into humanoid form.
Random battles already going on are always amusing. Hagraven vs. Spriggan. Spriggan vs. Troll. Giant vs. Dragon.

Many things have been amazing about Skyrim, but there was one particularly surprising encounter for me. Once when I had just finished killing a Dark Brotherhood Contract, not one, but two dragons attacked me. It was quite the fun and unexpected battle.
